A plate-changing advance

A partnership of two Canadian small businesses is creating whole-muscle, plant-based fish filets. The filets would be first of their kind: a plant-based product that tastes, feels and cooks like fish. The next step for this project is the proof-of-concept stage. Once this effort has concluded, arrangements with restaurants, grocery stores and food services companies will occur to get the fish filets on consumers’ plates.
