Grown and value added in Canada


Traditionally, Canada has grown crops that are processed abroad. Avena Foods Limited is working with its partners to change this trend. The Canadian specialty miller leads a successful project to research and develop new pulse flours—including a pulse-based egg replacement—that can be applied in baked goods, sauces and dressings. Big Mountain Foods and Daiya Foods will use the flours to develop new products for the growing vegan and flexitarian markets in North America and overseas, while Bakenology and The Village Bakery will use the Canadian plant-protein ingredients to improve food products shipped throughout Europe.
